What is it?
Salt Fish Fritters (also known as "Stamp and Go") are a popular Jamaican snack: small, fried fish cakes made with salted fish (usually saltfish/cod). This mix is the convenient base – you add (desalted) saltfish and water, and can optionally include onions, herbs, or chili.
Taste
Savory and spicy, with a classic fritter flavor. Depending on what you add (scallions, Scotch Bonnet, herbs), you can make it mild or truly "yard-style."
Preparation / Tips:
- First, soak/desalt the saltfish (depending on salt content) and flake it
